BEHIND PRODUCTION
Sara Gutierrez, the farmer at El Silencio, represents the fifth generation of coffee growers in her family. Located in Buenavista, Quindío, the farm spans 60 hectares and is strategically positioned in a region known for its ideal coffee-growing conditions. The farm benefits from its diverse ecosystem, with surrounding shade trees and carefully managed semi-shade conditions that promote healthy coffee growth and the development of unique flavor profiles.

Sara and her family apply scientific methods alongside their coffee-growing traditions, ensuring consistent quality in each harvest. After harvesting and drying, the coffee beans are stabilized in GrainPro and sisal bags, where they rest for 1 to 1.5 months before being ready for milling and export.

Nestled in the Quindío Department, in the heart of Colombia's majestic Central Mountain Range, the El Silencio Farm benefits from a unique microclimate shaped by the interaction between warm valley winds and cold mountain breezes.

This combination creates the perfect environment for slow, even maturation of the coffee cherries. The farm, surrounded by walnut, guamo, and banana trees, provides shade and semi-shade conditions that contribute to the development of complex flavors in the coffee.

We got to know Colombia El Placer via Col Spirit. Col-Spirit focuses on Colombian specialty coffee, offering fully traceable coffees with unique identities. They prioritize single-origin and single-farm beans.Their coffee is sourced from various family farms, some of which have a tradition and experience spanning over 100 years.

These families are eager to showcase their exceptional coffee to the world, but often lack the necessary resources to pursue their dreams. To support them, Col-Spirit purchases the coffee directly from the farms.They avoid intermediaries, cooperatives, and coffee agencies that primarily prioritize their own interests.

Col-Spirit is committed to educating farmers through workshops, helping them enhance their processes for picking, selecting, washing, and drying coffee beans. Furthermore, they meticulously cup and profile their coffee to ensure that customers receive the finest Colombian coffee available.

At El Silencio, the coffee cherries are hand-picked, then subjected to two floatation processes to ensure only the highest quality cherries are selected. The selected cherries undergo 168 hours of fermentation in controlled conditions, specifically the coldest part of the farm. After fermentation, the cherries are slowly dried on African beds until they reach a 10% humidity level. This meticulous Natural Carbonic Maceration (C.M.) process imparts fruity and sweet characteristics, enhancing the coffee's overall complexity.
