Colombia La Cabana arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

Named after our verdant estate, La Cabaña benefits from the consistently fertile soil of the region, enabling us to cultivate extraordinary coffees year-round. What truly distinguishes this coffee is the intricate 200-hour anaerobic fermentation process, a key step that elevates its flavor profile to unprecedented heights.

The journey begins with sun-drying the beans, harnessing the year-round consistency of our soil. Following this, our coffee undergoes a carefully monitored anaerobic fermentation for an extensive 200 hours. This experimental process, a well-guarded secret at La Cabaña, imparts a unique fruity funk to the beans, setting them apart from any other coffee experience. The meticulous nature of this fermentation, combined with the natural drying process, results in a cup that embodies complexity and depth.

As the head roaster, Thanasis from Kudu Coffee, masterfully tends to each batch in smaller roasts, ensuring that the distinct floral notes and tangs of cherries and grapefruit are preserved in a symphony of flavors.
