Coffee farming here dates back centuries, with smallholder farmers cultivating coffee at breathtaking altitudes of 1,800 to 2,300 meters. The high elevations, combined with Yemen’s dry climate and terraced farming, create the ideal environment for producing unique, high-quality beans.

Farmers in Atarah rely on age-old, sustainable practices passed down through generations. The cherries are handpicked at peak ripeness, ensuring only the best are processed. Atarah is located in the Haraz Mountains, one of Yemen’s most famous coffee-producing regions. The region’s terraced farms, carved into the rugged terrain, have been cultivated for centuries, and the area is renowned for its rich volcanic soils and high altitudes.

Haraz is part of Yemen’s coffee heritage, a country often regarded as one of the birthplaces of coffee cultivation. This coffee undergoes a unique natural anaerobic process, starting with the careful selection of ripe cherries. The cherries are fermented in sealed tanks without oxygen for 48–72 hours, allowing for controlled fermentation. This method enhances the coffee’s fruity and floral notes while adding layers of complexity.

After fermentation, the cherries are dried in the sun on raised beds for 15–20 days. During this period, they are carefully turned to ensure even drying and prevent defects. This meticulous process preserves the coffee’s vibrant character and produces a cup that is as extraordinary as its origin.
