This coffee undergoes a unique natural anaerobic process, starting with the careful selection of ripe cherries. The cherries are fermented in sealed tanks without oxygen for 48–72 hours, allowing for controlled fermentation. This method enhances the coffee’s fruity and floral notes while adding layers of complexity.
After fermentation, the cherries are dried in the sun on raised beds for 15–20 days. During this period, they are carefully turned to ensure even drying and prevent defects. This meticulous process preserves the coffee’s vibrant character and produces a cup that is as extraordinary as its origin.
