Sourced from the COOPAC KIGeyo cooperative in the Rutsiro District, this lot ranked 15th in the Best of Rwanda 2024 with a high score of 88.11—a testament to its outstanding quality. Coffee farming in this region thrives at an altitude of 1,800 meters, where cool temperatures and nutrient-rich volcanic soils create the perfect environment for slow cherry maturation. This slower ripening process allows for enhanced sweetness and acidity in the cup.

The cooperative follows meticulous practices, focusing on sustainability and the empowerment of smallholder farmers. Each step, from handpicking to processing, is done with precision to ensure only the highest-quality beans make it into the final lot.
LOCATION
This coffee comes from the Kivu region in Rwanda, a breathtaking landscape known for its rolling hills, fertile volcanic soils, and proximity to Lake Kivu. The high altitude and consistent rainfall in this area contribute to the vibrant acidity and refined complexity of the beans.

Rwanda has rapidly gained recognition in the specialty coffee industry, producing some of the finest washed coffees in Africa. Rwanda Kivu Lot 15 arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

This coffee undergoes a fully washed process, a method that highlights its bright acidity and crisp flavors. The cherries are selectively handpicked and immediately taken to the washing station, where they undergo flotation to remove any underripe or defective beans.

Once sorted, the cherries are depulped, and the beans are fermented in water for 12–24 hours to break down the mucilage naturally. After fermentation, they are washed multiple times to ensure clarity and consistency in the cup.

The final stage involves drying the beans on raised African beds for 14–21 days, with constant monitoring and turning to ensure even moisture levels. This careful drying process preserves the delicate floral and fruit notes, resulting in a refined and complex cup profile.
