Las Lajas, a renowned micro-mill, stands as the labor of love by Oscar Chacon and his wife, Francisca. At this well-established micro-mill, Oscar and his team have dedicated themselves to perfecting the art of coffee processing, boasting a distinct line for their organic farms. In addition to organic lots, Las Lajas offers a diverse range of Honey and Natural processes, leveraging controlled variables like varietal, brix content, layer thickness, and pulping methods to create nuanced and complex profiles.

Oscar's expertise, honed over years of successful production, has given rise to specific flavor profiles showcased in lots such as Black Honey, Alma Negra, and Black & Yellow Diamond. Despite the ever-evolving nature of his craft, Oscar has mastered the art of standardizing intense fermentation methods, turning them into his secret weapon. While he may smile and engage in conversation about the process, the true intricacies remain closely guarded, adding an air of mystery to Las Lajas' exceptional coffees.


Sabanilla de Alajuela, a unique coffee destination in Costa Rica, hosts a standout micro-mill committed to quality. Costa Rica Milenio arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

This lot comes from the Milenio variety, a first-generation
hybrid of the T5296 and Sudan Rume varieties. This was part of the first wave of F1 hybrid varieties created by the French
research institute CIRAD in collaboration with a network of
national coffee institutes in Central America PROMECAFE and CATIE.
