Ethiopia Kokosa Gr1 (200g)
Kokosa Gr1 opens with delicate aromas of jasmine and strawberry, followed by an expressive combination of blueberry, papaya and black cherry. Its creamy, juicy body brings richness and vibrancy to the cup, leading to a tropical, winey and beautifully long finish that lingers well beyond the final sip.
FARM: Kokosa
Ethiopia is the birthplace of Arabica coffee, and its exceptional genetic diversity remains one of the most distinctive elements of its specialty coffee production. These traditional varieties provide the foundation for coffees with remarkably diverse aromatic and sensory characteristics. What sets Kokosa Gr1 apart is its Anaerobic Natural processing. This approach combines fermentation in an oxygen-limited environment with natural processing, during which the coffee remains inside the fruit throughout drying. The result, as experienced through KUDU’s cupping profile, is an expressive and layered coffee, where floral aromas meet ripe berries, tropical fruits and a rich, creamy texture.
Kokosa Gr1 arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.
Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

ANAEROBIC NATURAL: WHERE FERMENTATION MEETS FRUIT
Anaerobic Natural processing brings together two important elements of coffee production: fermentation under oxygen-limited conditions and drying with the coffee cherry intact.
In this approach, whole coffee cherries are typically placed inside sealed containers, where naturally occurring microorganisms interact with the fruit in an environment with limited oxygen. These fermentation conditions can encourage the development of distinctive aromatic compounds, influencing the complexity and expression of the final cup.
Following fermentation, the cherries undergo natural drying, retaining their outer fruit layers until the coffee reaches the desired moisture level. Careful monitoring is essential, as fermentation conditions and drying practices significantly influence the final sensory result.
The combination of these techniques can produce coffees with pronounced fruit character, aromatic intensity, complex sweetness and wine-like qualities.
In Kokosa Gr1, this distinctive expression is reflected in KUDU’s tasting notes: jasmine and strawberry aromas introduce a vibrant profile of blueberry, papaya and black cherry. The creamy, juicy body creates an engaging texture, while the tropical, winey finish delivers a long-lasting impression.
