BEHIND THE PRODUCTION
This coffee is produced by around 900 smallholder farmers delivering ripe cherries to the Gubata washing station, located in Odo Shakiso, Guji. Farms are small, often intercropped with enset and other staples, and rely on organic, traditional methods.

The farm follows meticulous post-harvest protocols—sorting cherries by density, drying them slowly on raised beds, and monitoring every lot with precision. Under the leadership of Ture Waji and Sookoo Coffee, the focus is not only on cup quality but also on fair compensation, education, and investment in the surrounding community.
LOCATION
The Guji highlands are a remote and forested part of southern Ethiopia, rising to altitudes of 2,000–2,180 meters. Here, fertile red-brown soils, cool nights, and gradual cherry maturation contribute to complex sweetness and floral aromatics. Gubata is part of the newer generation of Guji coffees, showing that this origin is no longer in the shadow of Sidamo or Yirgacheffe—but proudly standing on its own.

Ethiopia Gubata Guji Gr1 arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

JARC 74110 is a selected cultivar developed by Ethiopia’s national coffee research center. Known for its resistance to disease and its compact size, it produces clean, fruit-driven cups with pronounced florals and high clarity. Alongside it, local Ethiopian landraces—often called "heirloom"—add wild, diverse flavor traits passed down through generations of forest-grown coffee trees.

This is a full natural process carried out on raised African beds. Cherries are picked at peak ripeness, carefully sorted, and dried under the sun for 15 to 21 days. They are turned regularly and protected from rain and over-fermentation. The result is a clean, structured natural with high sweetness, distinct fruit character.
