Birbirsa, a primary cooperative within the Kata Muduga Multi-purpose Farmer's Cooperative Union, is a key player in Ethiopia's renowned coffee story. Situated in Agaro town, just 45 kilometers from Jimma and 397 kilometers from Addis Ababa, this cooperative is deeply ingrained in the coffee culture of southwestern Oromia Region.

Working alongside farmers from five rural districts—Goma, Gera, Gumai, Setema, and Sigimo—Birbirsa contributes to the rich tapestry of Ethiopian coffee. Led by the esteemed general manager and representative, Asnake Nigat, the cooperative embodies a commitment to quality and sustainability.

Nestled in the fertile highlands of Ethiopia, Birbirsa's coffee beans thrive amidst favorable climate and soil conditions. Each bean tells a story of dedication and connection to the land, from cultivation by skilled farmers to the moment they reach your cup.

Birbirsa arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

At Birbirsa, the Natural/Sun Dried process begins with the careful selection of the ripest red cherries, handpicked from the lush coffee trees that dot the landscape. These cherries are then lovingly spread out on raised beds, where they bask in the gentle embrace of the sun for a duration of 15-20 days. It is during this time that nature works its magic, as the cherries gradually dehydrate, intensifying their sugars and flavors to perfection.

This process is not just a routine; it is a tradition passed down through generations, a testament to the deep-rooted connection between the land and its people. As the cherries undergo their sun-drenched transformation, they absorb the essence of Birbirsa's unique terroir—its rich soil, its temperate climate, and its vibrant spirit.

Once the cherries have reached their optimal moisture content, they are carefully milled to reveal the green Natural coffee beans within.
