FARM: Pipim Estate — Altieri Specialty Coffee

BEHIND PRODUCTION
Altieri Caturra comes from Pipim Estate, one of the family-owned coffee farms operated by Altieri Specialty Coffee in Boquete, Panama. The story began in 2005, when Eugene Altieri, an Italian-American entrepreneur who had settled in Panama, established the family coffee business after acquiring two farms in the Boquete highlands. What began as an agricultural investment gradually developed into a recognised specialty coffee operation, with the next generation continuing his commitment to quality. Today, the Altieri family cultivates several Arabica varieties across its estates, including Geisha, Typica, Catuaí and Caturra. Each variety is grown in carefully selected areas, taking advantage of the different elevations and microclimates found throughout the properties. Pipim Estate is particularly associated with Caturra cultivation. Located at a lower elevation than the family’s Mima Estate, it provides a distinctive growing environment for this compact Bourbon-derived variety. For KUDU’s Altieri Caturra, Natural processing allows the coffee to develop an expressive combination of chocolate richness and vibrant fruit character, with almond and cocoa aromas, a creamy body and a sweet, citrusy finish.
LOCATION
Pipim Estate is situated in Alto Lino, north of Boquete, in Panama’s Chiriquí Province, at elevations between 1,300 and 1,350 metres above sea level. Boquete is one of Panama’s most established specialty coffee-growing regions, surrounded by mountainous landscapes and influenced by the nearby Barú Volcano. Pipim Estate benefits from its particular location north of Boquete, where rainfall occurs throughout the year and creates a distinctive microclimate for coffee cultivation. The region’s combination of elevation, rainfall, temperature variations and fertile agricultural landscapes provides favourable conditions for growing Arabica coffee. Unlike the higher-altitude sections of the family’s estates, Pipim offers a different expression of Panamanian terroir, where Caturra develops its character under the specific environmental conditions of Alto Lino.

CATURRA: A BOURBON MUTATION WITH A DISTINCTIVE CHARACTER Caturra is a natural mutation of the Bourbon variety, first discovered in the Brazilian state of Minas Gerais between 1915 and 1918. Its most distinctive agricultural characteristic is its compact growth structure. Unlike traditional Bourbon plants, Caturra grows considerably shorter, allowing farmers to cultivate trees more densely while maintaining easier access for harvesting and farm management. The variety eventually spread throughout Central America, becoming an important part of coffee production in countries including Panama, Costa Rica and Guatemala. At Pipim Estate, Caturra is cultivated at 1,300–1,350 metres, where Alto Lino’s distinctive microclimate provides the conditions for its development. This particular coffee undergoes Natural processing, a method in which the harvested cherries are dried with their fruit intact before the dried layers are removed. The prolonged contact with the fruit during drying can contribute to sweetness, fruit intensity and a fuller mouthfeel, depending on the producer’s drying practices. In KUDU’s Altieri Caturra, the combination reveals aromas of almond and cocoa, flavours of dark chocolate, lemon and red fruits, and a round, creamy body. The experience concludes with a nutty, citrusy and sweet finish, highlighting a beautifully balanced expression of this traditional Arabica variety.
